Simple Breakfast On-The-Go

Your mother was right: breakfast is the most important meal of the day for the whole family. When you "break" your "fast," you give your body and brain the fuel necessary to start a new day on a high note; but time isn't always on your side. I am always looking for simple breakfast on-the-go.

Nutritionists agree that breakfast should be eaten within the first two hours of the day and should generally be 20-30 percent of your daily caloric intake. But what you choose to eat for breakfast can make a big difference; that doughnut will not do the same thing as a cup of low-fat yogurt with fresh fruit. From kick-starting the metabolism and improving concentration to boosting nutrient levels and lowering cholesterol, there are many reported benefits of regularly eating a healthy breakfast. So why are we sometimes still tempted to skip it?

Mornings are busy, especially if you have kids you're trying to get out the door while still trying to make it to work on time. While everyone knows the chaotic feeling of the morning rush, that's no reason for you or your kids to go without breakfast; the benefits are just too great to ignore.

On those really busy mornings, I have a few tricks to ensure my whole family eats some kind of nutritious breakfast on-the-go before heading out the door.

  1. For example, did you know you can microwave scrambled eggs? So easy and so filling!
  2. Fruit burritos are a favorite around my household, too. Just spread almond or peanut butter on a tortilla, fill with fruit (we usually do banana or apple) and roll it up. These can even be eaten on the road!
  3. And I've said it before, smoothies are customizable, awesome and easy – make it in a portable cup and get going! Especially lately with our green smoothie diet, frozen berries and fresh veggies are ready for the blending and make a filling and simple breakfast on-the-go.
